Cedros is a small coffee cooperative. Its made up of over 300 farmers. For the lots to qualify for the blend they have to cup above 86 points with distinct flavours, have good physical properties and be within our standards on humidity and aW to maximise shelf life. The deliveries can be down to a few bags each at the time and every lot is evaluated individually before it is approved as part of the quality blend.
Something we recently discovered about Peruvian coffee is that the United States invested heavily into organic standards for Peru and is a large part of why so many Peruvian farms are organic or follow organic standards today.
James's Opinion: Well balanced coffee, excellent with milk - great if new to brewing as it is very forgiveable. if you have an espresso machine at home, grind fine and try 18-22g with 2 to 1 ratio of water meaning the shot will have weight 38g then add steamed milk or hot water depending on how you like it. steamed milk should add a little sweetness so try without sugar, if too bitter grind a little more coarse and if too acidic try a little finer.
